Sprouted moong dal chilla | Pulses pan cake salty

Experimented with my sprouted moon dal to create this yummy chillas. These are packed with protein and fibre and its a complete breakfast. Ingredients 1 cup- sprouted moong dal 1- egg 1/4 cup- rice flour 1tsp each- turmeric powder, coriander powder, garam masala 1 tsp - Salt (or as per taste) 1 tbsp -oil or ghee 1/4 cup - Onion chopped 1/4 cup -coriander leaves chopped Method Soak the whole moong dal and let it sprout. Now clean and grind it in a corse paste, and add all the ingredients in it.  Take a heavy bottom frying pan, add few drops of oil and spread it then andadd one ladle spoon of mix in the centre and slowly spread it. Flip it after 2  minutes and let it cook both sides evenly. Serve with curd, chutney or mayo. Enjoy!

Crispy Bitter Gourd

Crispy bitter gourd with minimum oil and same crunch factor. It is usually served as a vegetarian side dish in lunch or dinner, but I have it with ghee smeared chapati. Heaven for me, hopefully you all will also like it. I have used only 2 tbsp oil to make it crispy without guilt, and the same recipe can be used for deep frying too, the results difference is extra oil. Ingredients: 1 large bitter gourd 1/2 teaspoon salt 1/4 teaspoon turmeric powder 1/4 teaspoon red chili powder 1/4 teaspoon cumin powder 1/4 teaspoon coriander powder 1/4 teaspoon garam masala 1/4 teaspoon amchur (dry mango powder) 1/4 cup chickpea flour (besan) 1/4 cup rice flour 2 tbsp oil  Method Wash the bitter gourd and pat it dry with a paper towel, remove the seeds and cut it into thin slices. In a bowl, mix the bitter gourd slices with salt, turmeric powder, red chili powder, cumin powder, coriander powder, garam masala, and amchur. Set aside for 10-15 minutes. Patra | Paitud | Taro leaves roll

Taro root leaves and gram flour come together for this magical dish, known as Paitud in our regional Pahadi language. It is also known as Patra or Taro leaves  rolls. It tastes crunchy from the outside and soft on the inside. Ingredients 10-12 big leaves of Taro root Gram flour- 1/2 cup Salt, chilli, coriander powder, turmeric powder- 1/2 tsp each Wate- 1/4 cup to make the flour paste. For Tempering Mustard Oil- 4 tbsp Chilli whole- 5 Cumin seeds- 1.2 tsp Mustard seeds- 1/2 tsp Method Wash the leaves thoroughly and make sure no water is on them. Take flour and spices in a bowl and make a paste which can be spread easily but not runny. Flat the ends of the leaves which have a little stem on them. Pile the leaves not exactly on each other only half way. Now, fold it in a horizontal way and like this make another batch too.  At the end they will look shape like a layered leaves rectangle. Aaloo Kheer | Potato Pudding

This delicious carby food "Potato Pudding" is an energetic and delicious dessert after a long fasting day. It's a very delightful pudding made with potato and milk. Ingredients Potato- 500gms boiled, peeled and mashed Milk- Whole milk half a litre Sugar- 1/2 cup or Sugar-free by choice Cardommon- 1 tsp powder Clarified butter/Ghee- 2 tbsp Dry fruits- 1/4 cup- by choice The same dish can be turned vegan by using almond milk and butter  Method Take a heavy bottom pan or kadhai and add ghee to it. Add boiled and mashed potato to it and stir continuously for 5 minutes. The oil will start oozing out from the sides and the aroma of fried potato is an indicator that it's quite done.  Add sugar at this point and fry again until it's melted, if using sugar-free skip this step. Once it is completely melted add the whole milk and cook on low flame for another 15 minutes. Keep string in between to avoid lumps and burning of pudding. Egg Salad

Egg salad is the perfect lunch recipe, it's just mixing a few healthy ingredients, and you fix yourself a perfect protein-rich meal in no time. The egg can be replaced with Tofu for vegetarians. Nutritional Value Three boiled eggs and an average mayonnaise person will give 170 Kcal per serving. If the dressing is homemade the calories can be cut down. Ingredients Boiled Eggs- 3 Cherry tomato- 6 Lettuce- a bunch (7-8 leaves) Dressing- 1 tbsp mayonnaise or homemade dressing Feta cheese- 2 tbsp crumbled or can be skipped too. (vegetarians can add tofu instead of egg and it will taste wonderful) Method Collect all the ingredients , wash the lettuce an tomatoes, cut it into desired size. Mix the ingredients well in your dish and serve with love. Enjoy!

Nawabi Mushrooms

Nawabi mushrooms is a vegetarian dish cooked in milk, cream, and cashew gravy. Little heavier in calories but perfect for any meal of the day Nutrition Value Since it has everything that has more calories, so it depends on how much nawabi you wish to get. Cook with butter the calories are added or cut the cream and oil and reduce the calories. the dish tastes good in all types and forms. Ingredients Mushroom- 400 gms- Thinly sliced  Onion- 2 big size- chopped Green chilli- 1 Ginger and garlic paste- 1 tbsp Tomato puree- 1/2 cup Cashew powder- 1/4 cup Milk- 1/2 cup Oil- 2 tbsp Spices- coriander, turmeric, gram masala- 1 tsp each Salt- 1 tbsp Dried methi crushed leaves- 1 tsp Method Chop the mushroom into thin slices and onion into small pieces. Chocolate Fudge

Simple chocolate fudge with walnuts is easy to make with kids and enjoy as snacks. Ingredients Dark Chocolate- 50 gms Milk Chocolate- 50 gms Condensed milk- 50gms Walnut- chopped 20gms Vanilla essence- 1tsp Salt- pinch Nutritional Value Dark chocolate and milk chocolate calories are around 500 kcal and with condensed milk, the recipe will make mini pieces of about 15 and 50 kcal each. Method Take a heavy bottom pan and melt the chocolate first. Mix all the ingredients and stir it continuously, until it all comes together Add the chopped walnut and salt to the chocolate fudge. Line a dish with parchment paper or foil and let the fudge set in the fridge for around two hours, cut into pieces of the desired choice Enjpy!
