Pizza | Store base

I call this as my pantry pizza as the base is already store bought and I have to just top with cheese and my homemade pizza sauce.   Nutritional Value Hell ya! Why even bother when eating pizza 😉. Well, the pizza base calories is around 300 kcal and with the amount of cheese you wish to put can change all over calories consumption. Here in my pizza it will be around 200 kcal per piece.  Ingredients Pizza Base- 2 Cheese pizza- 350 gms Pizza Sauce- 3 tbsp Butter- 2 tbs at room temperature Oregano- to sprinkle Method Warm your oven at a temperature between 430 C to 450 C Take the store bought base and spread and good layer of soft butter then spread the sauce as per your choice and put cheese all around it. Put in the center of the oven and bake for 10 minutes and then change to grill setting and bake for another 5 minutes till the top start bubbling. Pizza is ready in  almost 18 to 20 minutes. Corn Pasta | Red Sauce

Homemade red sauce corn patsa Nutrition Value Its a perfect mix of carbohydrates and protein and gives a very balance diet. Ingredients Corn - 150 gms boiled Pasta (any)- 250 gms, cooked as per packet instruction. Onion- 1 small Garlic- 3 cloves Salt and pepper as per taste Butter- 2 teaspoon Red Sauce Tomatoes- 4 blended 150 gms cheese (any) Salt, Pepper, chili flakes, Italian seasoning Butter- 1 tbsp Cheese- 150 gms Method In a heavy bottom pan add a little butter, then saute diced onion till they are translucent and then add garlic and saute again for 30 seconds. Add the boiled corn and mix all well together Add seasonings oregano, chili flakes, salt and mix again Mix the tomato puree with it and then cover and cook for 10 minutes with stirring in between. Then add cheese as per your choice to make the sauce consistency little thicker Add the cook pasta and fold everything together. Add more seasoning as per your choice. Enjoy!

Cheesy Veggie Pasta | White Sauce

Veggie cheese pasta is loaded with veggies, we can also replace veggies with chicken or make it plain white. Nutrition Value Its a perfect mix of carbohydrates and protein and gives a very balance diet. Ingredients Carrot, Capsicum - 250 gms chopped Pasta (any)- 250 gms, cooked as per packet instruction. Mushroom- 250 gms Onion- one small Garlic- 2 cloves Salt and pepper as per taste Butter- 2 teaspoon White Sauce 1/2 cup milk 150 gms cheese (any) Salt, Pepper, chili flakes, Italian seasoning Butter- 1 tbsp Method In a hevay bottom pan add a little butter, then saute all veggies Now add chopped garlic, Italian seasoning, salt and chili flakes (Optional) to it Here, I have made short way of white pasta sauce by directly adding flour to the veggies then adding milk and let it cook all in slow gas. Pumpkin flower fritters (pakora)

A very simple side dish handed from generation to generation. The simple pumpkin flowers are picked washed, and battered for a perfect side dish for our next pahadi meal. PS- This dish is prepared by my Mom and pictures are sent to me by my little sis. Just blogging little memories for future.   Nutritional Value  Pumpkin flowers are very rich in Vitamin A with add-ons of Vitamin C and Potassium . Adai Dosa

Adai Dosa comes from the morning menu of southern India. I got this recipe from my Tamilian friend who shared her traditional way of making soft and yummy Adai Dosa.   Nutritional Value The recipe is a mix of rice and lots of pulses which includes lots of protein with carbs. This recipe makes around 12 dosa's. Calories- 100k cal ( per piece) Protein- 15 g approx Carb- 12 g approx Ingredients 1 cup- Dosa rice 1 cup- Normal rice 1/4 cup- ToorDal 1/4 cup- Chana Dal 1/4 cup- Moong Dal 1/4 cup-  Urad Dal 1/2 cup - Grated  fresh coconut  5 - Red Chilies (soaked in water and mad into paste) Salt to taste Few curry leaves Few Coriander leaves Method Soak the rice and all pulses overnight  grind them in regular Dosa batter and keep it for outside for fermentation for 3 to 4 hours. A warm bowl of delicious Indian carrot pudding lifts my inner wintry spirit. I prepared it using only condensed milk without adding extra sugar. This yummy reddish bowl is all we need to warm up in cozy nights. Nutrition Value This recipe serves an approx 6 bowls of pudding with a maximum of 140 calories each. The pudding has carrot, condensed milk, and whole milk it. It is a rich dessert and considering the fat amount it should be in our occasional cheat list. Samosa  When it comes to Monsoon and rainy days all I can think of having a cup of tea with hot Samosa's while it rains outside.  So, for my love for the samosa and for the rains, I have prepared my favorite snack, potato-stuffed samosas. In India, usually in evenings, it's a very common scene in the market, hot samosas coming out of every gulli and people munching on it with lots of chutney or chole. Nutritional Value  This is a high-end calorie food as it is deep fried and it has potato filling in it. For me it tastes heavenly, I will skip a meal but never samosa. Vegetable Manchurian

My sister and I always look for Manchurian and chili potatoes whenever we eat out, any hotel or restaurant if it's on their menu it will be on our table. So after eating it in zillion of places here is my version of Indo-Chinese fusion food 'Vegetable Manchurian Dry', have it dry or with gravy, with noodles or fried rice, it will never disappoint you. Nutritional Value These Veg Manchurian balls are shallow fried which cut lot of calories, and basically, this dish is made of only vegetables which fill our daily dose of nutrition. It has Vitamin A, Vitamin C, Calcium, iron, because of vegetables and its good for kids too. The oil or butter we use to prepare makes a real difference in calories.
