Aaloo Kheer | Potato Pudding

This delicious carby food "Potato Pudding" is an energetic and delicious dessert after a long fasting day. It's a very delightful pudding made with potato and milk. Ingredients Potato- 500gms boiled, peeled and mashed Milk- Whole milk half a litre Sugar- 1/2 cup or Sugar-free by choice Cardommon- 1 tsp powder Clarified butter/Ghee- 2 tbsp Dry fruits- 1/4 cup- by choice The same dish can be turned vegan by using almond milk and butter  Method Take a heavy bottom pan or kadhai and add ghee to it. Add boiled and mashed potato to it and stir continuously for 5 minutes. The oil will start oozing out from the sides and the aroma of fried potato is an indicator that it's quite done.  Add sugar at this point and fry again until it's melted, if using sugar-free skip this step. Once it is completely melted add the whole milk and cook on low flame for another 15 minutes. Keep string in between to avoid lumps and burning of pudding. Kheer | Rice pudding

The white bowl of sweetness, a dessert which is equal to food. Kheer is made of rice cooked in milk and mixed with lots of dry fruits a delight for eyes and tummy. Nutritional Value The kheer nutritional value depends how much cream is used or made of khoya or just skim milk. Here I have prepared with khoya and this dish serves 5 bowl with 300k cal each. Ingredients 1 Cup- rice ( any kind white) 2 liters of milk 1/2 cup dry fruits- any thing of choice Sugar free- 3 tbsp 1 tsp- clarified butter  Saffron strands- few (optional) 200 gms- khoya or milk powder if khoya not available. Method Clean the rice with water and let it sit in it for an hour. (Optional step but it speed the process of cooking). Quick and easy way to make everyone's favorite winter dessert gajar ka halwa. The traditional slow cooking halwa recipe I have shared earlier in the blog, but this easy recipe is done by my mother and believe me the taste and aroma is still the same.   Nutritional Value This recipe serves an approx 6 bowls with a maximum of 140 calories each. The pudding has carrot, khoya, and whole milk it. It is a rich dessert and considering the fat amount it should be in our occasional cheat list. A very easy and preservative free homemade mango ice-cream for all the mango lovers. Nutritional value The mango fruit is delicious and sweet , it contains over 20 different minerals and vitamins. this ice-cream contains both cream and condensed milk and serves almost 24 scoops of ice-cream. Ingredients Mangoes- 3 medium size Cream- 1cup Condensed Milk- 200 gms Method Peel the mangoes and make a puree in mixer grinder. Now add cream and condensed milk and mix it again. Pour the mix in a freezer friendly bowl and freeze it for 8 to 12 hours. Scoop and beat the heat. Enjoy!

Peanut and Jaggery can definitely do wonders, when blend together in a creamy formation. A very sweet tooth conundrum to save that untimely sweet cravings. Nutritional Value Peanut 1656 kcal Jaggery 640 kcal Around 24 pieces with almost 100 calories in each, 3 gm protein, 1.91 gm carbs Ingredient 2 cups Peanut Roasted 1 cup Jaggery 2 tbsp roasted sesame seeds 1 tbsp Ghee 1/4 cup Water Method Take the peanut and roast them in pan, until the raw smells goes out and they are crunchy. Remove all the skin and crush it coarsely in mixer grinder. Add some roasted sesame seeds and keep aside. Now take a heavy bottom pan/kadahi, and put 1 tbsp ghee in it and then add the Jagery and 1/4 cup water. let the mixture cook until its a single thread syrup. To fill that sudden chocolate craving, a simple chocolate chunks filled cakey brownie, hope I get all brownie points for this. Nutritional Value They are whole wheat and AP flour mixed brownies, though it is more fibrous so one piece here and there won't harm. Whole Wheat Flour AP Flour Cocoa Powder Butter Around 12 pieces and each piece is around 120 calorie. Ingredients Whole Wheat Flour- 1/2 cup AP Flour- 1/2 cup Cocoa Powder- 1/2 cup Butter- 1/2 cup melted Brown Sugar- 1/2 cup White Sugar- 1/2 cup Chocolate- 100 gms Eggs- 2 Baking Soda- 1/2 tsp Baking powder- 1/2 tsp Method Chop the chocolate bar in small pieces and melt it in a bowl Mix the sugar, eggs, butter with the melted chocloate one at a time. I have transformed our dear dry fruit cashew into a famous Indian sweet called Kaju Katli. Homemade and fresh for any occasion or festival season.   Nutritional Facts Cashews are high in calories.This recipe has only two ingredients, cashew and sugar, here I have used 200gms which is around 1000 calories and  3/4 cup of sugar. this recipe makes around 40 pieces and 50 calories each. Ingredients Cashew- 200 gms Sugar- 3/4 cup Cardamom powder- one teaspoon Water- 1/4 cup Method Roast the cashew and let it cool. Make a powder of the cashew and keep it aside. Take a pan and mix sugar and water in it and heat it up, and make one string syrup of it. Now mix the cashew powder and mix it completely, add some ghee in it and make a soft dough out of it. Spread one teaspoon ghee on a plate and spread the dough over it in half inch thickness. Cut it into diamond shape pieces and serve. Enjoy!
