Chicken Meatballs

The traditional meatball with spaghetti is swapped with a poultry version. The balls dipped in tomato sauce are absolutely perfect for dinner or lunch.  Ingredients For Chicken Balls 500gms- Minced Chicken 200gms- Bread Crumbs 100 gms-  Chopped Onions 10 cloves- Chopped Garlic 50gms- Chopped Parsley 1/2 tsp- Salt 1/2 cup oil- Any neutral Oil Tomato Base 500gms- Purred Tomatoes 100 gms- Tomato Puree 100 gms-  Chopped Onions 1/2 tsp- Oregano 10 cloves- Chopped Garlic 10-15- Chopped Basil leaves 2bspn- Olive Oil Method Mix all the chicken balls ingredients in a bowl and make small balls. Take a heavy bottom par, preferably an iron skillet and heat the oil. Place the balls around the pan, don't overcrowd and cook them for 5 minutes on both sides in medium flame or until there are no visible pink boundaries around the balls.  This is a shallow-fried method but the balls can be deep-fried too.  A very simple chicken curry dish made with few ingredients and lots of love and  spices.   Nutritional Value Chicken curry has an expected 240 calories in 1 cup  This dish serves 5 people. Almost 50 percent in one cup of curry is protein combined with fat and carbs. Ingredients 500 gms of Chicken curry cut (washed) 3 sliced onions medium size 1 teaspoon Coriander powder 1 teaspoon Turmeric powder 1 teaspoon Garam Masala 2 teaspoon Chicken Masala  3 chilies green chopped 2 teaspoon Salt 20 cloves of garlic 2 inch ginger 2 tomatoes medium size 3 tablespoon of clarified butter/ghee or butter or oil 2 bay leaves 1 big cardamon 1/2 Cinnamon stick 1 bunch chopped coriander leaves Method    Heat the pressure cooker and pour 2 tablespoon of ghee. Rotisserie Chicken

Thanksgiving is here, and so is our Rotisserie whole chicken. It can be easily prepared ahead and then we try to make different chicken based recipes from it. It's perfect as the main dish of a simple meal with sides. Ingredients To Brin 1/4 cup of salt  1/4 cup of granulated sugar 10 peppercorns 2 bay leaves 3 cups water Marinate 2 tablespoons butter 2 teaspoons paprika 1 1/2 teaspoons dried thyme 1 teaspoon garlic minced 1 teaspoon ginger minced Salt and freshly ground black pepper  1 (4 to 5 pound) whole chicken (see note 1) Clean the chicken cavity and rinse it with cold water. Trim any excess skin from the neck area. Set aside. Mix  1/2 cup of salt and 1/2 cup of granulated sugar in one cup of water and pour it into a large pot and bring it to a boil. Add enough cold water to the pot to cover the chicken and add the bay leaves and peppercorns. The Indio-Chinese fusion food which is very popular and easy to make at home too. Serve it over rice or make it dry as a snack, it never dissapoints. Tandoori Chicken

A very simple OTG cooked tandoori chicken. Marinated in Indian spices and its our kind of special dish for the thanksgiving always.   Nutrition Value Around 200 calories is in per 100gms of tandoori chicken, it basically the size of chicken which varies calories each time. Ingredients Whole Chicken For marination Garlic- 2 whole (chopped) Ginger- 1 inch (chopped) Curd- 1/4 cup hung curd for per 1 kg of chicken Spices 1 tbsp each- turmeric, garam masala, coriander masala, tandoori masala, salt Oil Mustard- 1tbsp Method Mix the marination ingredient and massage on inside and outside of chicken thoroughly and let it marinate for minimum 2 hours and maximum overnight. Pull out of the fridge half hour before cooking. Fix the chicken by tying it with thread so that it doesn't fall over.   Set the OTG or oven for 200 C (380 F) and fix it in the rotisserie section and let it cook for 60 to 80 minutes. Easy way to assemble your favorite topping of Chipotle Chicken Bowl and enjoy at the comfort of your home, in this lock down times. Nutritional Value Almost 600 to 800 calories per bowl. Ingredients Chicken- 500gms Shredded Lettuce- 500 gms Tomato- 2 diced Sour-cream- 1/2 cup Capsicum- 1 sliced Babycorn- 5 sliced Cooked White/Brown Rice- 2 cups Cooked Beans- 1 cup Cheddar Cheese- Shredded Guacamole- 1 cup Method Marinate your chicken in few spices of your choice and add ginger and garlic to it. Then Fry it in a pan until they are cooked completely. Then chop your capsicum and baby corn in slices and fry them until cooked Now take the cooked rice and assemble all the ingredients in separate bowls, and let everybody assemble in the way they like. Chicken Mushroom Pasta

Chicken Mushroom Pasta with white sauce, easy dinner time fix for any day. Here, I have used boneless chicken breast and penne pasta for the recipe. Nutrition Value Its a perfect mix of carbohydrates and protein and gives a very balance diet. Ingredients Chicken Breast- 250 gms Pasta (any)- 250 gms, cooked as per packet instruction. Mushroom- 250 gms Onion- one small Garlic- 2 cloves Salt and pepper as per taste Oil- 2 teaspoon White Sauce 1/2 cup milk 150 gms cheese (any) Salt, Pepper Butter- 1 tbsp Method Flatten the chicken breast and cook it in a pan with little butter. Chop Mushrooms, Onion, two cloves of garlic. Take a pan add 1 tbsp oil, and fry onion in it, then add mushroom and garlic and keep frying untill everything is cooked.
