Coconut Khova Barfi

A very simple and three step coconut Barfi for Diwali. This three ingredient barfi is delicious and easy to make.   Nutritional Value This is a a pure coconut and khova dish , the calories in coconut are less but khova is full fat. So this is a festivity recipe. I am not mentioning calorie per piece wise but this whole recipe has approx 2192 kcal in it. So eat wisely. Ingredients Khova- 400 gms Coconut- 2 and 1/2 cups Sugar- 1/12 cup Cardamon Powder- 1/2 tsp Method First Shred the coconut and  dry roast it in a wok, don't turn it brown. Melt the khova in a heavy bottom pan until it starts to ooze some ghee from sides, add sugar and cardamon powder and mix it well. Add the roasted coconut and mix it thoroughly Grease a bowl or dish of your choice and fill it with the barfi mixture and press it down from all sides. Mark the design as per your choice and refrigerate for at least two hours before serving, so that it can retain its shape. Enjoy! Happy Deepawali!

Adai Dosa

Adai Dosa comes from the morning menu of southern India. I got this recipe from my Tamilian friend who shared her traditional way of making soft and yummy Adai Dosa.   Nutritional Value The recipe is a mix of rice and lots of pulses which includes lots of protein with carbs. This recipe makes around 12 dosa's. Calories- 100k cal ( per piece) Protein- 15 g approx Carb- 12 g approx Ingredients 1 cup- Dosa rice 1 cup- Normal rice 1/4 cup- ToorDal 1/4 cup- Chana Dal 1/4 cup- Moong Dal 1/4 cup-  Urad Dal 1/2 cup - Grated  fresh coconut  5 - Red Chilies (soaked in water and mad into paste) Salt to taste Few curry leaves Few Coriander leaves Method Soak the rice and all pulses overnight  grind them in regular Dosa batter and keep it for outside for fermentation for 3 to 4 hours. Coconut Ladoos

A very simple three ingredients dessert Coconut Ladoos taste amazingly good and fresher than the regular sweet shops. It takes around 40 minutes to prepare the whole dish. Try this homemade fresh ladoos as a regular day dessert or for any festival, you will feel happy to serve the fresh handmade dish on the table. Nutritional Value Desserts are always high on calories, in this recipe, the coconut has iron, vitamin, b-6, Dietary fiber whereas the condensed milk has some protein. Here, I have used 300 gms of coconut and 300 ml of condensed milk. Calories*-  60 each Shredded coconut-1000 k cal Condensed Milk- 1000 k cal *calories are an estimation of my cooking.
