Aaloo Kheer | Potato Pudding

This delicious carby food "Potato Pudding" is an energetic and delicious dessert after a long fasting day. It's a very delightful pudding made with potato and milk. Ingredients Potato- 500gms boiled, peeled and mashed Milk- Whole milk half a litre Sugar- 1/2 cup or Sugar-free by choice Cardommon- 1 tsp powder Clarified butter/Ghee- 2 tbsp Dry fruits- 1/4 cup- by choice The same dish can be turned vegan by using almond milk and butter  Method Take a heavy bottom pan or kadhai and add ghee to it. Add boiled and mashed potato to it and stir continuously for 5 minutes. The oil will start oozing out from the sides and the aroma of fried potato is an indicator that it's quite done.  Add sugar at this point and fry again until it's melted, if using sugar-free skip this step. Once it is completely melted add the whole milk and cook on low flame for another 15 minutes. Keep string in between to avoid lumps and burning of pudding. Mushrooms can be used in any forms, gravy, dry, or stir fried and due to its texture it holds every flavor very well. In my home, mushrooms are my son's favorite and here I have prepared a tasty dry chilli mushrooms, a perfect side dish for your meal or just enjoy it with drinks.   Nutrition Value Mushrooms are very less in calories, here I have used 200 gms of mushroom which have 60 calories max. I have added veggies to it and same sauces. This dish serve two and around 100 Kcal each servings. Ingredients Mushroom- 200 gms Capsicum- 2 medium Onion- 2 medium Baby corn - 2 medium Soya Sauce- 2 tbsp Green chilli sauce- 2 tbsp Red chilli sauce- 2 tbsp Garlic- chopped 6 pods Salt- 1/2 tsp Oil- 2 tbsp Chilli flakes if you need Green Onion- one bunch to mix or garnish Method Chop all the veggies in thin strips and keep aside. Here, I have made my favorite chaat which is very famous in Madhya Pradesh, India. The yellow peas chole served with corn and potato tikkis dipped in sweet and sour chutney is a perfect evening snack for rainy days.   Nutritional Value Its main ingredient is Yellow peas and potato which is mix of protein and carb, not a daily diet food, but once in a while use it as a cheat meal. Snack for all occasions, mungode are little pakoras made with moong dal and grated cauliflower. These are one of the famous evening snacks from the heart of Madhay Pradesh. Served hot with any kind of chutney on any occasion, they wont fail to impress. Nutritional Value Each 1 cup of moong dal contains around 300 calories with 8g of protein whereas cauliflower contains 50 calories in 2 cups. The main recipe is called Mushroom Malai Matar but I opted-out cream to make it more health-friendly and regular on my dining table.
