Minced Chinese Chicken with Fried Rice – A Comfort Bowl of Flavor

There’s something incredibly satisfying about a bowl of fried rice paired with juicy, flavor-packed minced chicken. This recipe brings together the smoky aroma of wok-tossed rice and the savory goodness of Chinese-style minced chicken. Perfect for weeknight dinners, or when you’re craving a hearty, wholesome meal!

🥢 Ingredients

For Minced Chinese Chicken:

  • 300 g boneless chicken (finely minced)

  • 1 medium onion (finely chopped)

  • 1 tbsp ginger-garlic paste

  • 1 green chili (optional, finely chopped)

  • 1 tbsp soy sauce

  • 1 tbsp oyster sauce (or hoisin sauce if preferred)

  • 1 tbsp chili sauce (adjust to taste)

  • 1 tsp rice vinegar (or white vinegar)

  • 1 tsp cornflour mixed in 2 tbsp water (for thickening)

  • 1 tbsp sesame oil (or vegetable oil)

  • 2–3 tbsp spring onion greens (for garnish)

  • Salt & pepper to taste

For Fried Rice:

  • 2 cups cooked rice (preferably a day old for best texture)

  • 2 eggs (lightly beaten)

  • ½ cup carrot, beans, capsicum (finely diced)

  • ¼ cup cabbage (shredded)

  • 1 small onion (sliced)

  • 2 tbsp soy sauce

  • 1 tsp vinegar

  • 1 tbsp sesame oil (or vegetable oil)

  • Salt & pepper to taste

  • Spring onion greens (to finish)

👩‍🍳 Method

Prepare the Minced Chicken

Heat sesame oil in a wok or pan.
Stir in ginger-garlic paste and green chili, cook until fragrant.
Add the minced chicken and stir-fry on high heat until it changes color and cooks through.
Add soy sauce, oyster sauce, chili sauce, and vinegar. Mix well.
Pour in the cornflour slurry and stir until the sauce thickens and coats the chicken.
Finish with a sprinkle of spring onion greens. Set aside.

Make the Fried Rice

Heat oil in a wok. Add the beaten eggs and scramble lightly. Keep aside.
In the same wok, sauté onions until soft, then toss in carrots, beans, capsicum, and cabbage. Stir-fry on high flame for 2–3 minutes.
Add the cooked rice, soy sauce, vinegar, salt, and pepper. Mix well.
Toss back the scrambled eggs and combine everything evenly.
Garnish with spring onion greens and add boiled egg (optional)

Serve a generous portion of hot fried rice with a ladle of saucy minced chicken on top (or on the side). Add some extra chili sauce if you like it fiery!
