Mushroom Mattar Curry

Mushroom Mattar curry is a perfect vegetarian main course dish for the non-meaty days and its vegan too! It has a creamy cashew, almond and onion base. The main recipe is called Mushroom Malai Matar but I opted-out cream to make it more health-friendly and regular on my dining table.

Servings- 3

Ingredients
Main:
1 -cups peas
1 cup sliced button mushroom

For Gravy/Base
1- Large red onion (chopped roughly)
8- Cashew (chopped roughly)
8- Almond (chopped roughly)
4- pods of garlic
1-inch ginger
2 bay leaves
2 tomato
1 small cinnamon stick
2 green cardamom
1 clove
2 green chilies (optional)
1/2 teaspoon coriander powder
1/4 teaspoon turmeric powder
1 tablespoon salt (adjust to taste)
1 teaspoon Red chili powder
1/2 teaspoon garam masala
3 tablespoons of oil (any kind)

Method

  1. Take a heavy bottom pan or Indian kadhai and heat one tablespoon oil in it, add the sliced mushroom, let them cook for 5 to 8 minutes till they turn little soft, remove and keep aside.
  2. Now clean the pan add another tablespoon of oil, heat it up and add bay leaves, cinnamon stick, green cardamom, and clove. Once they start to splutter add the chopped onion and fry it well till it turns brown now add the grounded spices (coriander, turmeric, chili, garam masala) with ginger, garlic, cashew, and almond.
  3. Fry for two minutes and then add chopped tomatoes and salt let it cook covered in medium flame for five minutes. 
  4. Take out the bay leaf, cardamom, cinnamon stick from the mix and blend the rest of it to make the base*.
  5. Clean the pan and add one tablespoon oil and add the base to it with a half cup of water and washed peas and let it cook for 10 mins covered in low flame. Keep checking in between, if the gravy thickens add more water
  6. Now add cooked mushrooms in it and cover and cook for another 10 mins, till everything cooks well.
  7. Serve with steamed rice or paratha.

Enjoy!

Base* it's a basic gravy, you can remove almond and cashew if the diet doesn't allow it. Rest the base can be used to cook any kind of vegetables you prefer.
