Shakshuka

Shakshuka is a very popular Middle- Eastern dish, but its origin is said to be in North Africa--Tunisia and it can be served any time of the day and an quick fix too. Nutritional Value Shakshuka is basically poached eggs in spicy tomato sauce. This recipe serves three and one slice is around 200 calories excluding the bread. Ingredients Capsicum medium size- 1 Diced Onion medium size- 1 Diced Tomato medium size-6 Diced Eggs- 5 whole  Olive oil- 1 tbsp Garlic- 3 pods Cumin- 1.2 tsp Pepprika- 1/2 tsp Salt- 1/ 12 tsp Chilli- 1 green chopped (optional) Method Take a heavy pan and put the olive oil in it, heat it and add diced capsicum to it and then diced onion,let it cook in slow flame.   Now add garlic fry for few seconds then add tomato puree Mix it well, and let it cook for few minutes, then add cumin, paprika, salt chilli, coriander leaves and let it simmer for at least 5 minutes by stirring in between. Granola | Breakfast

The crunchy honey soaked oat with loads of dry fruits is what we will be making here. A very go to breakfast or just eat it as a crunchy snack. Nutritional Value G ranola is an excellent source of fiber, iron, heart healthy fats, and protein. 1 serving will be around 160 to 180 Kcal. Ingredients Rolled Oats- 3 cups Honey- 3/4 cup Cinnamon Powder- 1tsp Different Seeds/ Dry Fruits- 1 cup mix (almonds, fox nut, melon seeds, cashew) Salt- 1/2 tsp Vanilla- 1tsp Turmeric - 1 tsp Oil- 2tbsp Method Preheat the oven at 180 C for at least 10 minutes. Crush your big nuts in pestle Now, mix all the ingredient in a bog bowl Spread it evenly over a baking sheet Pop in the oven for 30 to 35 minutes and rotating in every 10 minutes. I personally enjoy granola over a bowl of curd and fruits, and it can be mixed with milk or just like a mixture. Enjoy!  

Crunchy Corn | Savory Pancakes

This is a Garhwali side dish called 'Patudee', we usually make with lunch as the crunch from them add extra flavour to the food. Nutritional Value Made up of corn seeds and some flavorful ingredients , these pancakes are very healthy and light in calories Ingredients Corn seeds: 1 cup Onion- medium Garlic pods- 3 Ginger- 1/2 inch Salt- 2 tsp Turmeric Powder- 1/2 tsp 1/4 cup- Corn (Besan) flour Ajwainn (Carom) seeds: 1/2 tsp Corainder leaves- 1/4 cup chopped water- 1/2 cup (accordingly) Oil- 2 tbsp ( for 6 pancakes) Method Take the seeds out of the cob and add onion, garlic and ginger to it and make a coarse paste of it. Now add flour, salt, ajwain seeds, coriander leaves, turmeric powder to it, and add 1/2 cup of water gradually to make a pour-able paste. Now heat a heavy pan, and some oil in it and then add a ladle full of mix in the center and spread in the pan, cook on both sides by flipping every two minutes or untill the brown spots are seen and sides cook crunchy enough. ...

Sweet Raisin Bun

Sweet bun with raisin is very go to snack for kids, just smear butter or jelly and let them have these little doughy cushions. Nutritional Value This is half whole wheat and half all purpose flour and the recipe makes 8 regular size buns, each having 150 calories. Ingredients All Purpose Flour- 1 and 1/2 cup Whole Wheat Flour- 1 and 1/2 cup Ghee or Butter- 2 tablespoons Sugar : 1 teaspoon Instant Yeast - 1 and 1/2 tea spoons  Egg -1 Milk : 3/4 cup (warm around 110 to 115 F) Salt : 1/4 tsp  Raisins- 1/2 cup Honey - 1/4 cup Method Mix all the ingredients in a food processor and make a dough.   Mix well for 3 minutes in low speed until the dough is soft and spongy to touch and let it proof for 1 hour in an warm place.    Make the dough ball by folding the sides and making a round ball according to the size you need.    Here the recipe makes 8 regular size bun.   Now place the balls in a warm place covered for again 45 minutes till they are double ...

Till Ladoo | Sessame seeds

January brings two festivals for Garhwali people in which we make sesame till ladoos and prasad. Its Makar Sakranti and Sakath Chauth. Here I have prepared ladoo with jaggery, a very festive in my culture. Nutritional Value   Sesame seeds are very healthy and winter friendly as they come under hot basics of food. Here I have used 150 gms of seeds and 100 gms of jaggery which made aroud 25 small laddos with 30 kcal each. Ingredients Sesame seeds- 150 gms  Jaggery- 100gms Ghee- 1tbsp Method Clean the seeds and dry roast them in a wok/kadahi Crush them coarsely either in a grinder or a mortar.   Melt the jaggery with two spoons of water in a heavy pan and add ghee in it, as soon as its start boiling add the coarse seeds and mix it thoroughly. Now wet your hand with little water and start making small round (ladoo) shapes and keep them aside in  a greased plate.
