Crispy and Healthy Vegetable Fritters

Ingredients:
½ cup grated carrot
½ cup shredded cabbage
½ cup finely chopped capsicum
¼ cup rice flour
¼ cup besan (gram flour)
½ tsp salt (or to taste)
¼ tsp turmeric powder
½ tsp coriander powder
½ tsp garam masala
1 egg (optional)
Water as needed
2 tbsp oil (for shallow frying)
Instructions:
In a mixing bowl, combine the vegetables with the dry ingredients and mash well with your hands.
Let the mixture rest for five minutes. Shape the mixture into small patties and place them on the pan
Heat a heavy-bottomed pan over medium heat and add two tablespoons of oil.
Shallow-fry each fritter for about five to seven minutes on each side until golden brown and crispy.
Serve hot with chutney, yoghurt dip, or ketchup
