A calm good night's sleep is essential for our overall well-being and mental health. Unfortunately, many people struggle with sleep, which can harm their physical and emotional health. Nonetheless, with a few easy modifications to our routine, we can significantly improve the quality of our sleep. Sprouted moong dal chilla | Pulses pan cake salty

Experimented with my sprouted moon dal to create this yummy chillas. These are packed with protein and fibre and its a complete breakfast. Ingredients 1 cup- sprouted moong dal 1- egg 1/4 cup- rice flour 1tsp each- turmeric powder, coriander powder, garam masala 1 tsp - Salt (or as per taste) 1 tbsp -oil or ghee 1/4 cup - Onion chopped 1/4 cup -coriander leaves chopped Method Soak the whole moong dal and let it sprout. Now clean and grind it in a corse paste, and add all the ingredients in it.  Take a heavy bottom frying pan, add few drops of oil and spread it then andadd one ladle spoon of mix in the centre and slowly spread it. Flip it after 2  minutes and let it cook both sides evenly. Serve with curd, chutney or mayo. Enjoy!

Crispy Shallow Fried Chicken

Few simple steps to get very crispy shallow fried chicken. The recipe was created accidentally, but tastes perfect. Ingredients 2 boneless, skinless chicken breasts cut its small pieces 1/2 cup all-purpose flour 1/2 cup cornstarch 1 tsp salt 1 tsp black pepper 1 tsp paprika 10 pods of chopped garlic 2 eggs 1/2 cup Vegetable oil for frying Method   In a bowl, mix the flour, salt, black pepper, paprika, and garlic. Beat the eggs and add to them. Cut the chicken breasts into small pieces and fold completely in the mixture. Let this marinate for 4 hours in fridge. Keep it out for half an hour before frying Heat the vegetable oil in a heavy frying pan over in medium-high heat. Add the chicken breasts to the pan and cook for 5-6 minutes each sides. Once cooked, remove the chicken breasts from the pan and place them on a grilled stand lined with paper towel to remove any excess oil. Serve fried chicken immediately with your favourite dipping sauce. Enjoy!

Crispy Bitter Gourd

Crispy bitter gourd with minimum oil and same crunch factor. It is usually served as a vegetarian side dish in lunch or dinner, but I have it with ghee smeared chapati. Heaven for me, hopefully you all will also like it. I have used only 2 tbsp oil to make it crispy without guilt, and the same recipe can be used for deep frying too, the results difference is extra oil. Ingredients: 1 large bitter gourd 1/2 teaspoon salt 1/4 teaspoon turmeric powder 1/4 teaspoon red chili powder 1/4 teaspoon cumin powder 1/4 teaspoon coriander powder 1/4 teaspoon garam masala 1/4 teaspoon amchur (dry mango powder) 1/4 cup chickpea flour (besan) 1/4 cup rice flour 2 tbsp oil  Method Wash the bitter gourd and pat it dry with a paper towel, remove the seeds and cut it into thin slices. In a bowl, mix the bitter gourd slices with salt, turmeric powder, red chili powder, cumin powder, coriander powder, garam masala, and amchur. Set aside for 10-15 minutes. Green Paneer

Paneer in green gravy is a must try when you want to break free from traditional paneer dishes, the spices are less and the coriander and mint leaves gives a compete new flavour. Ingredient Paneer/Cottage cheese- 200 gms lemon jice- 1 tbsp Salt- 1/2 tsp Gravy Onion- 2 minced/paste Coriander and mint- 2 cups- paste Cashew powder- 1/4 cup Water- 1 cup Salt- 2 tsp Spices (coriander powder, garam masala) Oil- 2 tbsp (any) Cream- 1 tbsp (optional) Method Marinate the paneer pieces with lemon and salt for about 1 hour, then fry it in a heavy bottom pan and keep it aside. Mix onion, coriander, mint, cashew powder together. Take a pan heat 2 tbsp oil and add the spices first and fry them then add the above mixture and cook it in low flame for about 10 minutes or until the oil oozes out.
