Aloo Matar: A Classic Comforting Indian Curry

 Introduction

Aloo Matar is one of those timeless Indian dishes that brings warmth, comfort, and nostalgia to every meal. Made with simple ingredients like potatoes and green peas, this dish is a staple in many Indian households. Ingredients

  • 3 medium potatoes (peeled and cubed)

  • 1 cup green peas (fresh or frozen)

  • 2 medium tomatoes (pureed)

  • 1 onion (finely chopped)

  • 2 green chilies (slit)

  • 1 tablespoon ginger-garlic paste

  • 2 tablespoons oil

  • 1 teaspoon cumin seeds

  • 1/2 teaspoon turmeric powder

  • 1 teaspoon coriander powder

  • 1/2 teaspoon red chili powder

  • 1/2 teaspoon garam masala

  • Salt to taste

  • Fresh coriander leaves (for garnish)

  • 1 to 1.5 cups water

Method

Begin by heating oil in a pan over medium heat. Add cumin seeds and let them splutter. Then add finely chopped onions and sauté until they turn golden brown. This step builds the base flavor of the curry.

Next, add ginger-garlic paste and green chilies, cooking for a minute until the raw aroma disappears. Pour in the tomato puree and cook the mixture until the oil starts to separate from the sides. This indicates that the masala is well-cooked.

Now, add turmeric powder, coriander powder, red chili powder, and salt. Mix everything well. Add the cubed potatoes and green peas, coating them evenly with the masala.

Pour in water, stir, and cover the pan. Let it cook on medium flame until the potatoes are soft and fully cooked. Stir occasionally to prevent sticking.

Once the potatoes are tender, sprinkle garam masala and give it a final mix. Adjust the consistency of the gravy as per your preference by adding a little more water if needed.

Turn off the heat and garnish with freshly chopped coriander leaves. Serve hot with roti, paratha, or steamed rice for a wholesome and satisfying meal.
