Method
Step 1: Prepare the Vegetables
Wash, chop, and steam (for gravy) or lightly stir-fry (for rice) all the vegetables.
Keep the portions for fried rice and creamy gravy separated after initial mixing.
Step 2: Make the Vegetable Fried Rice
In a pan, heat some oil and sauté minced garlic until aromatic.
Add onions, carrots, capsicum, and cabbage, and stir-fry on high heat for 2-3 minutes.
Add the cooked rice and toss well. Season with a little salt and garnish with chopped green onions. Set aside.
Step 3: Make the Creamy Vegetable Gravy
In another pan, melt a small amount of butter or oil.
Add minced garlic and onions, sauté until translucent.
Sprinkle 2 tablespoons of flour over the veggies and stir well.
- Gradually add milk while stirring to create a smooth sauce.
- Add the fried half veggies to the creamy mix.
Mix in the grated cheese, salt, and pepper. Let it simmer until creamy and thick.
Step 4: Prepare the Pan-Seared Paneer or Fried Boiled Eggs
Pat dry the paneer cubes.
Toss them gently with all-spice and salt; similarly, do the same with the boiled eggs.
Heat a non-stick pan, sear the paneer cubes on each side until golden brown and fry boiled eggs similarly on the side.
Step 5: Assemble the Dish
Serve the fried rice with a generous helping of the creamy vegetable gravy.
Top it off with the pan-seared paneer cubes for a delicious finish.
